Smoked Aussie lamb tartare
Portion size: 4 oz.
Alternate cuts: Lamb tenderloin
4 each minced, Australian lamb short loin
1/2 cup smoked aioli
1/4 cup tamarind gel
Puffed rice, as needed for garnish
To serve: Toss the lamb short loin with the smoked aioli and drizzle with the tamarind gel. Garnish with puffed rice and micro greens.
